Hegi soba noodles
Hegi soba is a traditional soba noodle from the Uonuma region of Niigata prefecture that uses plenty of seaweed to connect it, and is named after it is served in a bite-sized bowl called "hegi".
The color of the buckwheat is light green because it uses gliopeltis boiled by a special method.
This texture cannot be stopped once it is eaten.
